My roommates girlfriend made these delicious red velvet cake balls the other night, and wow, they were amazing! They are similar to oreo balls, except that they are made of red velvet cake instead. To make your own, follow this recipe:
For the Cake:
2 1/4 cup cake flour
1/2 cup softened unsalted butter
1 tsp vanilla extract
1 tsp baking soda
1/4 cup cocoa
1-1/2 cups granulated sugar
1/2 to 2 oz red food coloring
1 tsp salt
White chocolate/Milk chocolate to dip the cake balls in later
Preheat oven to 350 F. Cream the butter and sugar. Add eggs one at a time and mix after each.
In another bowl, mix cocoa and food coloring until they form a paste. Add the paste mixture to the egg mixture and mix.
Add the flour, vanilla, and salt. Mix. Add the baking soda and stir gently.
Pour into pan and smooth.
Bake 20 to 30 minutes.. Remove and cool 10 minutes.
When the cake has cooled sufficiently, using a knife, cut out small “balls” of the cake (about 1-2 inches in diameter) and place them on a plate.
Melt your chocolate of choice; then, take each cake ball and, using a fork, dip it in a bowl of the melted chocolate in order to cover the cake ball completely. Place the covered balls on wax paper to cool.
If desired, you can put sprinkles, drizzle chocolate, etc on top for added appeal!
